Zucchini Parmesan Crisps


I love snacks, appetizers and finger food. There are a million different ways to kick off a meal and these Zucchini Parmesan Crisps are my new favorite thing! Ellie Kreiger shares this delightful recipe plus some fun food facts like this snack is a great source of Molybdenum and Vitamin C.

What you’ll Need:

Cooking spray
2 medium zucchini (about 1 pound total)
1 tablespoon olive oil
1/4 cup freshly grated Parmesan (3/4-ounce)
1/4 cup plain dry bread crumbs
1/8 teaspoon salt
Freshly ground black pepper
