A few weekends ago I found myself waiting for a show to start out at Mandalay Bay. We had an hour to kill before the show and decided to get some food before all the fun began. We wandered through the massive halls of Mandalay and found ourselves at Rick Moonen’s second level restaurant (above RM Seafood) Rx Boiler Room. I had been wanting to check this place out and was instantly taken in by everything from the decor to the smells and the steampunk style outfits the staff had on.
Combining the alchemy of food and drink, Rx Boiler Room is Celebrity Chef Rick Moonen’s spin on classic comfort food. Offering guests a variety of playful creations in small and large plate portions, the menu is ideal for a shared dining experience. Elevating and complementing the overall experience, the drink menu features an emporium of the finest spirits and innovative libations.
The restaurant’s interior celebrates the sub-genre often associated with science-fiction and inspired by industrialized Western civilization during the 19th century affectionately known as steampunk. From industrial hardware to swooping velveteen fabrics, the steampunk inspired elements surrounding the dining experience evokes Chef Moonen’s creative process of playful pairing, inventive illustration, and culinary mixing.
Chicken Put Pie Nuggets – natural jus with peas-n-carrots (AMAZING)
Shrimp-N-Grits – andouille, poblanos & cajun gravy
Roasted Brussel Sprouts – bacon, horseradish & creme fraiche
Mac + Cheese X Five – pinwheel pasta, blue, parmesan, brie, cheddar & blanc
Pie Americana – apple compote, puff pastry, vanilla ice cream & walnuts
Other Highlights: Rx Guacamole, Buffalo Fried Oysters, Baby Kale Cesar
Unfortunately this was a quick dinner, but I can not wait to go back and try out more of the Menu! The highlight of this meal was actually when I looked over towards the kitchen (where you can actually see down into RM Seafood), and saw Chef Rick Moon standing there. How often does that happen?
