Loaded Potato Soup

All I can think about is the great jacket collection I left behind when leaving home in Vermont so many years ago. I could definitely use a down jacket right about now! My temporary solution for this weather has become super warm comfort food, and this Loaded Potato Soup recipe from one of my favorite New Orleans cooking blogs Culicurious is top of the list!

What you’ll Need:

5 pound bag Yukon Gold potatoes, peeled, halved length-wise, with each half cut into 6 pieces
2 tablespoons kosher salt
4 tablespoons unsalted butter
4 strips of bacon, finely diced
3 yellow onions, large diced
1 teaspoon kosher salt
1/2 gallon whole milk
2 cups of grated cheddar cheese
1 cup thinly sliced green onion
1 tablespoon kosher salt
1/2 teaspoon cayenne pepper

Garnish:

Shredded cheddar cheese
3 strips of bacon, cooked crispy and cut into bits
