When it comes to the classics, I am a big believer in the phrase ‘don’t reinvent the wheel.‘ If something has been good for generations, why go ahead and change it up? This totally applies to my favorite dessert of all time, Key Lime Pie. I’ve literally eaten Key Lime Pie all over the globe (seriously… France, California, Amsterdam, the Caribbean, and in the motherland Key West FL) and you can tell instantly how it’s made. A rare exception to the rule however is this adapted recipe from sweetcakes bakeshop, where she ops for a zested gram cracker crust vs zesting the filling itself. I must say… it worked!

What you’ll Need:

4 egg yolks, beaten
1 (14 ounce) can sweetened condensed milk
1/2 cup key lime juice
1 cup finely ground graham cracker crumbs
1/4 cup white sugar
1/4 cup unsalted butter, melted
zest of a few key limes
