Half Roasted Chicken with Mustard Greens in Meyer Lemon Yogurt

Happy Friday folks! I’m excited to share a new recipe with you all today with the help from Mountain High Yogurt. After work meals can be tough but as long as you’ve got certain things on hand in your fridge at home, you’ll be ok. I’ve recently come to find out about Mountain High (normally I’m more of a greek yogurt fan) and have been using it like crazy. With no preservatives, no gelatin, no artificial flavors or colors added, it’s hard to go wrong!

The dish I’m going to share today is one of those great types of meals that just comes together once you start cooking. We started off with a half roasted chicken breast and the rest is history!

What You’ll Need:
1/2 Deboned Chicken
Mountain High Plain Yogurt
Meyer Lemons
Garlic Cloves
Mustard Greens
Thyme
Olive Oil
Cumin
Ground Mustard Seed
Ground Chili Flakes
Slat & Pepper

Start off by roasting your chicken (we used thyme and lemon for spice) and while that’s going you can get started tearing up your greens and peeling garlic. In a separate pan from the chicken, throw in  your garlic with some olive oil and thyme and let that cook up nicely. When you’ve got that great sear on the garlic add in the mustard greens. If you haven’t used mustard greens before make sure to keep an eye on them, they boil down quickly! We used 1 whole bush for this and it was just enough for 2 plates. Once you’ve got the chicken and salad ready to go you can prep your yogurt mix. We’ve been using all the meyer lemons we can get our hands on before they’re gone for the season but don’t worry if you can’t find them, regular lemons will be fine also. Scoop out half the tub of yogurt (this will make it so you’ve got some leftover for lunch or dinner tomorrow) into a mixing bowl. From there add 3 tbsp of cumin, 1 tbsp of ground mustard seeds and 1 tsp ground chili flakes. Mix it up and then add lemon to taste. I believe over the chicken, greens and yogurt we used about 3 whole lemons. Serve the dish with a drizzle of your yogurt mix over the greens with the chicken on the side. The mix was so good I ended up putting some on my chicken as well! This is a great hearty meal that incorporates a good protein, yogurt as a healthy alternative to dressing and some awesome dark greens.
