Any way you can combine a roster of ingredients like goat cheese, heirloom tomatos, picked peppers and onions, salami, eggs, and freshly baked bread is a wonderful thing in my book. Am I right?! The other night we decided to make salmon (post coming soon) and it ended up taking a little longer than expected. My solution? A quick crostini appetizer bar! Having freshly baked bread at home is always a great idea, because you can whip up a plate of these little toast in no time. Here’s the flavor rundown:
Toast 1 – Garlic and Herb Goat Cheese, Heirloom Tomato, Pickled Peppers and Onions (closest to the m logo on the board)
Toast 2 – Fried Egg, Veggie Medley (squash, kale, bacon)
Toast 3 – Goat Cheese, Egg Salad, Salami, Port Salut, Garlic Chips
Toast 4 – Port Salut, Salami, Heirloom Tomato, Pickled Onions, Drizzle of Honey
The best part about this fun little appetizer bar? Everything was scavenged from the fridge. Yep! This is basically a leftovers crostini plate. The ingredient combinations are endless when you can find ways to use what you’ve got on hand. Other great ideas for this place could have been some greens and a little olive oil. Next time tho!
