She had me at caprese… literally, anything in caprese form is top of the list in my book. My girl Jessica (aka The Novice Chef) recently whipped up this fantastic recipe for a Caprese Chicken and I could not be more excited to try it out!
What you’ll Need:
4 skinless chicken breasts
kosher salt & freshly ground black pepper
2 tablespoons olive oil, divided
3 large garlic cloves, minced
2 pints cherry tomatoes, halved
10 large basil leaves, finely chopped
8 oz fresh buffalo mozzarella, sliced in 1/2 inch thick slices
balsamic vinegar, to taste
The fun thing about this recipe is it’s another totally customizable dish. If you’re into garlic throw more of that in, if you are looking for a little spice just add some cayenne, you can even edit the cheese by swapping out the mozzarella with a peperjack!
